Vitek's Gut Pak fighting for college dish supremacy

On any given weekday, dozens of Wacoans visit Vitek’s- a family-run BBQ joint since 1915 and home to the famous Gut Pak.

Owner Bill Vitek explained the dish. “We lay down a bed of Fritos. Then we spread the cheese on it. Then we cut up sausage. Then we’ll put the onlions, pickles and
peppers on the side. And then we proceed on to put the chooped barbecue and the beans on top of that. Barbecue sauce and bread tops it al off."

The dish was a request from I-35 construction workers in the early 60’s who simply didn’t have enough time to dine in.

From then on it caught like wildfire.

“We do sell a lot of meats like the brisket and other smoked items, but the Gut Pak is the trademark of this business," said Vitek.

Julie Vitek Harris has been running the business for six years. In that time she has turning the one picnic table bbq joint into the establishment it is today.

Tomorrow marks the beginning of March Madness which means millions of Americans were fill out brackets to
see who is the best college basketball team in the country.

And now the Cooking Channel is hosting a tournament of their own to see which
college campus in America has the best grub.”

“We are so excited about this, said Julie. We weren’t really sure if this was going to happen or not. But now were in the voting process. We are in round one of five rounds. And we’re going for the win. “

A win for Vitek’s. But also a win for Baylor. After all, the two are hand in hand.

“As a result of being eight blocks from campus it seems to be a great gathering place for students. It’s kind of one of their traditions. We have generations of customers coming back and that’s the parents bringing the new students from Baylor to Viteks," said Julie.

Voting takes place over the next three weeks so stuff your gut and do your part.
